Peter Merriman was a pioneer in the Hawaii Regional Cuisine movement when he opened his namesake restaurant. Considered one of the island’s best restaurants, it’s absolutely worth the 45-mile trek up the coast of the Big Island to Waimea for his delicious food. What’s served up are beautiful dishes made with 90 percent or more of local fish, beef, produce, goat cheese and more. Don’t forget to select a wine from the award-winning list.
